Chef

Toshio Sawai, Executive Chef
of SUN with MOON

Mr Toshio Sawai started his career as a chef at Kitcho Japanese restaurant in 1983 and spent 7 years at Kyoto where he practiced a wide variety of cooking techniques in a demanding environment. In 1990, he joined Restaurant Suntory Group, the owner of Japanese Dining “SUN”. He honed his skill for 3 years at Restaurant Suntory Singapore at Delphi Orchard as a sous chef, and his excellent skills greatly contributed to the restaurant’s good reputation in Singapore. In 1993, he moved to Nadaman Restaurant at the Shangri-La Hotel in Singapore. Mr Sawai was recruited by the renowned Keyaki restaurant at the Pan Pacific Hotel Singapore in 1997 to be Sous Chef.

Following his illustrious appointments, Mr Sawai returned to the Restaurant Suntory Group in 2000 to take on the responsibility of Executive Chief Chef at Restaurant Suntory in Hotel Intercontinental. At his culinary pinnacle, and with Hot Palette (Asia-Pacific) Pte Ltd now, Mr Sawai has embarked on a new challenge to create an entirely new style Japanese cuisine at SUN with MOON Japanese Dining & Cafe. He is consistently creating exciting new menus, blending traditional techniques with unique concepts at a reasonable price.
